



OKS
OKS is a fermentation and incubation device designed as an evolution of the traditional ways of yogurt making in the Balkan Peninsula. It’s name is an acronym of Old Knitted Sweater, referring to one of the tools most often used in this endeavor. A pot of warm, cultured milk would be wrapped in a sweater, towel or similar item, and placed in a dry, dark place to ferment.
Precise temperature is achieved through a heating wire inside the base of the device, while wool is used to insulate containers. Wool is chosen due to its natural insulating and fire-retardant properties, and it is encased in cotton which was treated for fire-retardancy. All the materials used are detachable and recyclable.
Once the containers are placed and the interface is powered, the user can set a temperature between 30 C and 65 C, in a time period up to 12 hours. The moment the interface is connected to the base, OKS begins its work.
The soft body of the device allows it to house containers of many different shapes and sizes, enveloping and ensuring full insulation during the long fermentation process for the best homemade yogurt/kefir/kombucha, or for an impromptu slow cooker, tea cozy and much more.
